So there are a lot of things you can donate. Most people are aware of blood, plasma, and marrow. I can't donate blood, even if I did stop sleeping with gay/bi people (thanks, Canadian Blood Services) there is a general exclusion for people from the UK (thanks, spongiform encephalitis).
Kidney's out, because mine are badly formed and make rocks. So that leaves us with liver and lung. There are no non-directed (anonymous) lung transplants in Toronto. But liver....
